- 1 lb ground beef (80/20)
- 1 cup fresh breadcrumbs
- 2 large eggs
- 1/3 cup balsamic vinegar
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1/3 cup ketchup
- 1 tbsp Worcestershire sauce
- 2 tbsp fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- Sauté chopped onion in a skillet over medium heat until translucent (about 5 minutes), then add minced garlic and cook for an additional minute.
- In a large bowl, combine ground beef, breadcrumbs, eggs, sautéed onion and garlic, Worcestershire sauce, salt, pepper, ketchup, and parsley. Mix until well combined.
- Shape the mixture into an elongated loaf on a lined baking sheet or in a loaf pan.
- For the glaze, mix balsamic vinegar with additional ketchup and brush it generously over the meatloaf.
- Bake for 60 minutes or until fully cooked. Baste with more glaze halfway through cooking. Allow to rest for at least 10 minutes before slicing.
