  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) fire-roasted tomatoes

  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 2 cups chicken broth
  • 1 tbsp sugar (brown or white)
  • 2 tbsp peanut butter (optional)

Instructions

  1. Prep all ingredients: chop onions and mince garlic.
  2. In a large skillet over medium heat, add oil and sear chicken thighs until browned on both sides (about 5 minutes each).
  3. Remove chicken, then sautΓ© onions in the same pan until translucent (about 3-4 minutes). Add minced garlic and cook for an additional minute.
  4. Stir in canned tomatoes, cocoa powder, cumin, cinnamon, and sugar; combine well.
  5. Return chicken to the skillet and pour in chicken broth. Cover and simmer on low heat for 30-40 minutes until chicken is tender.
