  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • ¾ cup milk
  • Salt and pepper to taste

Instructions

  1. Chop vegetables into bite-sized pieces.
  2. Heat oil in a large pot over medium-high heat; sear chicken breasts for about 5 minutes on each side until golden brown. Remove from pot.
  3. Add onions, garlic, carrots, and celery to the pot; sauté until onions are translucent (about 5 minutes).
  4. Pour in chicken broth and dried thyme; return seared chicken to the pot. Bring to a boil then reduce heat to simmer for about 20 minutes.
  5. In a bowl, combine flour, baking powder, milk, salt, and herbs until just mixed (do not overmix).
  6. Scoop spoonfuls of dumpling batter over simmering broth; cover tightly and cook for another 15 minutes without lifting the lid.
  7. Check dumplings with a toothpick for doneness; serve hot.
