Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 1 cup wild rice blend
  • 6 cups low-sodium vegetable broth
  • 1 cup heavy cream (or coconut cream for dairy-free)
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 tsp dried thyme
  • 2 bay leaves
  • 2 tbsp butter or olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, melt butter or heat olive oil. Add seasoned chicken breasts; sauté until golden brown (5–7 minutes). Remove chicken and set aside.
  2. In the same pot, add garlic, onions, carrots, and celery. Sauté until softened (3–4 minutes).
  3. Pour in vegetable broth and add rinsed wild rice blend along with thyme and bay leaves. Bring to a gentle boil; reduce heat and simmer covered for about 40–50 minutes until rice is tender.
  4. Remove bay leaves; stir in heavy cream gradually while adjusting seasoning with salt and pepper.
  5. Serve hot, garnished with fresh herbs if desired.
