  • 2 medium carrots, diced
  • 2 celery stalks, chopped

  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onions and sauté until translucent (about 5 minutes), then stir in minced garlic.
  2. Add diced carrots and celery, cooking until softened (5–7 minutes).
  3. Stir in rinsed lentils and canned tomatoes (with juice). Mix well.
  4. Pour in vegetable broth and add cumin, paprika, thyme, salt, and pepper. Bring to a gentle boil.
  5. Reduce heat to low, cover, and simmer for 30–40 minutes until lentils are tender but still hold their shape.
  6. Taste and adjust seasoning if needed before serving.
