  • 12 jumbo pasta shells
  • 1 cup canned pumpkin puree
  • 1 cup smoked Gouda cheese, shredded
  • 1 cup ricotta cheese
  • 1/2 cup spinach, chopped
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 cups creamy Alfredo sauce (store-bought or homemade)
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook jumbo pasta shells in salted water until al dente. Drain and set aside.
  3. In a bowl, mix pumpkin puree, ricotta cheese, shredded Gouda, spinach, garlic, Italian seasoning, salt, and pepper until smooth.
  4. Stuff each shell with the filling and place them in a baking dish topped with half of the Alfredo sauce.
  5. Drizzle remaining sauce over the filled shells and sprinkle with grated Parmesan.
  6. Bake uncovered for 25-30 minutes until bubbly and golden brown.
