  • 1 medium eggplant, sliced into thin rounds
  • 2 small zucchinis, sliced into thin rounds
  • 3 cups fresh spinach, washed
  • 8 oz cremini mushrooms, sliced
  • 1 cup whole milk ricotta cheese
  • 2 cups marinara sauce (no added sugar)
  • 2 cups shredded mozzarella cheese
  • 1/4 cup fresh basil leaves, chopped

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish lightly with olive oil.
  2. Slice eggplant, zucchini, and mushrooms into thin rounds for even cooking.
  3. Sauté spinach in a skillet over medium heat until wilted (about 3-4 minutes). Set aside to cool.
  4. In a bowl, mix ricotta cheese with salt, pepper, and half of the chopped basil.
  5. Start layering: Spread marinara sauce on the bottom of the dish; layer sliced vegetables in an overlapping pattern. Add dollops of ricotta mixture and sprinkle mozzarella cheese between layers. Repeat until all ingredients are used.
  6. Cover with aluminum foil and bake for 30 minutes; remove foil and bake for an additional 15-20 minutes until golden brown. Let rest before serving.
