  • 1 large sweet potato (about 1 lb), peeled and diced

  • 4 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 2 tsp ground cumin
  • 1 cinnamon stick
  • 2 cups fresh spinach or kale
  • 2 tbsp lemon juice
  • 2 tbsp olive oil

Instructions

  1. In a large pot over medium heat, heat olive oil until shimmering. Add chopped onion and sauté until translucent (about 5 minutes).
  2. Stir in minced garlic, cumin, and the cinnamon stick; cook for another minute until fragrant.
  3. Add diced sweet potatoes and carrots; pour in vegetable broth and bring to a gentle simmer for about 10 minutes until veggies begin softening.
  4. Stir in drained chickpeas; let simmer together for an additional 15-20 minutes.
  5. Just before serving, fold in spinach or kale until wilted and squeeze fresh lemon juice over the top.
  6. Serve hot in bowls, garnished with herbs if desired.
