  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 4 cups fresh spinach
  • 1 can (14 oz) diced tomatoes
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • Freshly grated Parmesan cheese for serving

Instructions

  1. Set the Instant Pot to sauté mode. Add olive oil and heat until shimmering.
  2. Stir in the diced onion; sauté until translucent (about 3 minutes). Add minced garlic, carrots, and celery; cook for another 3 minutes.
  3. Pour in the chicken broth, scraping any bits stuck to the bottom. Add diced tomatoes, Italian seasoning, salt, and pepper; stir well.
  4. Secure the lid and set to high pressure for 5 minutes. Once done, allow natural release for 10 minutes before manually releasing any remaining pressure.
  5. Open the lid and stir in heavy cream slowly. Fold in fresh spinach until wilted (about 1–2 minutes).
  6. Serve hot, garnished with freshly grated Parmesan cheese.
