- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 4 cups fresh spinach
- 1 can (14 oz) diced tomatoes
- 2 tsp Italian seasoning
- Salt and pepper to taste
- Freshly grated Parmesan cheese for serving
Instructions
- Set the Instant Pot to sauté mode. Add olive oil and heat until shimmering.
- Stir in the diced onion; sauté until translucent (about 3 minutes). Add minced garlic, carrots, and celery; cook for another 3 minutes.
- Pour in the chicken broth, scraping any bits stuck to the bottom. Add diced tomatoes, Italian seasoning, salt, and pepper; stir well.
- Secure the lid and set to high pressure for 5 minutes. Once done, allow natural release for 10 minutes before manually releasing any remaining pressure.
- Open the lid and stir in heavy cream slowly. Fold in fresh spinach until wilted (about 1–2 minutes).
- Serve hot, garnished with freshly grated Parmesan cheese.
