- 4 medium potatoes (about 600g)
- 4–5 cloves fresh garlic
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp freshly cracked pepper
- 2 tbsp chopped fresh parsley (optional)
Instructions
- Wash and peel (if desired) the potatoes. Cut them into quarters.
- Boil the potatoes in salted water for 15-20 minutes until tender.
- Meanwhile, wrap garlic cloves in foil with a drizzle of olive oil and roast at 400°F (200°C) for about 20 minutes.
- Drain the potatoes and return them to the pot. Squeeze in roasted garlic, add salt, pepper, and remaining olive oil. Mash until smooth.
- Let cool slightly, then form tablespoon-sized balls from the mixture.
- Preheat oven to 425°F (220°C). Place potato pops on a parchment-lined baking sheet and bake for 25-30 minutes until golden brown.
