- 1.5 lbs boneless, skinless chicken thighs
- 2 cans (4 oz each) green chilies
- 1 cup fresh cilantro, chopped
- 2 cans (15 oz each) hominy, drained
- 2 tbsp lime juice (freshly squeezed)
- 1 medium sweet onion, chopped
- 4 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 2 tsp ground cumin
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Chop the onion and mince the garlic. Drain hominy and measure out spices.
- In a skillet over medium-high heat, sear the chicken thighs until golden brown on both sides.
- Place seared chicken in the slow cooker and add onion, garlic, green chilies, hominy, spices, and broth. Stir gently.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
- Shred the chicken in the pot with two forks and squeeze lime juice over before serving. Garnish with chopped cilantro and avocado slices.
