Instructions

  1. Preheat the oven to 300Β°F (150Β°C) and prepare a baking sheet lined with parchment paper.
  2. Sift together almond flour, cocoa powder, and confectioners' sugar to remove lumps.
  3. In a clean bowl, whip egg whites until foamy; gradually add granulated sugar and continue whipping until stiff peaks form.
  4. Carefully fold the dry ingredient mixture into the whipped egg whites until just combined.
  5. Pipe small circles onto the prepared baking sheet and let them rest for about 30 minutes to form a skin.
  6. Bake for 15-20 minutes or until they easily lift off the parchment paper.
  7. For the filling, heat heavy cream until simmering, then pour over chopped dark chocolate; stir until smooth.
  8. Once cooled, pipe raspberry jam onto half of the macaron shells, followed by dark chocolate ganache on top before sandwiching with another shell.
