  • 4 large eggs (room temperature)
  • 1/2 cup granulated sugar (plus 2 tbsp for egg whites)
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter (softened)
  • 1/4 cup espresso or strong coffee
  • 8 oz dark chocolate (chopped)
  • 1 cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. In a bowl, combine almond flour, cocoa powder, and half of the sugar.
  3. Whip egg whites until soft peaks form; gradually add remaining sugar and whip to glossy peaks.
  4. Gently fold the dry mixture into the egg whites and pour into the prepared pan.
  5. Bake for 15-20 minutes until springy; cool completely before removing from the pan.
  6. For ganache, heat heavy cream until simmering; pour over chopped chocolate and stir until smooth.
  7. Slice cooled sponge into three layers; layer with ganache and espresso-soaked pieces.
  8. Frost with whipped cream on top layer; refrigerate for at least one hour before serving.
