- 2 tbsp extra virgin olive oil

Instructions
- Rinse basmati rice under cold water until clear. In a pot, combine the rice and water, then bring to a boil. Reduce heat to low, cover tightly, and simmer for 15 minutes until fluffy.
- Heat olive oil in a large skillet over medium heat. Add sliced onions and bell peppers; sauté for about 5-7 minutes until softened.
- Stir in minced garlic during the last minute of cooking until fragrant.
- Push vegetables to one side of the skillet; add ground beef to the other side. Break apart and cook until browned (about 5-8 minutes) while seasoning with salt and pepper.
- Pour soy sauce over the beef mixture once cooked through; stir well and let simmer for 2-3 minutes.
- Fluff cooked rice with a fork and serve topped with the beef mixture.
