  • 1 ¼ cups water
  • 1 can (5 oz) canned tuna, drained
  • 2 tablespoons low-sodium soy sauce
  • ½ ripe avocado, sliced
  • 1 cucumber, thinly sliced
  • 2 nori sheets, cut into squares
  • 2 tablespoons toasted sesame seeds
  • Wasabi (optional)

Instructions

  1. Rinse sushi rice under cold water until it runs clear. Combine with water in a pot, bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes until tender.
  2. While the rice cooks, slice avocado and cucumber. Cut nori sheets into squares.
  3. In a bowl, flake the drained tuna and mix with soy sauce.
  4. Once rice cools slightly, scoop it onto nori squares. Top with tuna mixture, cucumber slices, and avocado.
  5. Sprinkle sesame seeds on top and add wasabi if desired. Serve immediately.
