Ingredients

  • 34 boneless, skinless chicken breasts
  • 2 ripe avocados
  • 4 large whole wheat tortillas
  • 1 cup cherry tomatoes, halved
  • ¼ cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • Salt and pepper to taste
  • Greek yogurt or sour cream (optional)

Instructions

  1. Preheat grill or skillet over medium heat. Season chicken with salt and pepper. Cook for 6-7 minutes per side until internal temperature reaches 165°F (75°C). Let rest before slicing.
  2. Halve cherry tomatoes and dice avocados. In a bowl, mix diced avocado with lime juice, cilantro, and salt.
  3. On a tortilla, layer sliced chicken, avocado mixture, and halved tomatoes. Add Greek yogurt or sour cream if desired.
  4. Fold in sides of tortilla and roll tightly from one end to another.
