  • 1 cup sushi rice
  • 2 tbsp rice vinegar
  • 1 ripe avocado, sliced
  • 1 medium carrot, grated
  • 3 tbsp cornstarch
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sriracha (adjust to taste)
  • Cooking oil for frying

Instructions

  1. Press the tofu between paper towels for 15 minutes to remove moisture. Cut into bite-sized cubes.
  2. Toss tofu cubes in cornstarch until evenly coated.
  3. Heat oil in a non-stick pan over medium-high heat; fry tofu until golden brown on all sides (about 5 minutes per side).
  4. Rinse sushi rice under cold water until clear; cook according to package instructions with added rice vinegar.
  5. While the rice cooks, grate the carrot and slice the avocado.
  6. Assemble bowls with sushi rice as the base, topped with crispy tofu, grated carrots, and avocado slices.
  7. Mix soy sauce and sriracha; drizzle over bowls before serving.
