  • 1 lb lean ground beef
  • 2 tbsp taco seasoning
  • 1 can (15 oz) black beans, rinsed
  • 1 cup fresh salsa
  • 2 cups shredded Mexican cheese blend
  • 1 cup sour cream
  • ¼ cup chopped cilantro

Instructions

  1. Preheat your oven to 375°F (190°C). Cook the lasagna noodles according to package instructions until al dente; drain and set aside.
  2. In a skillet over medium heat, brown the ground beef while breaking it into small pieces. Stir in taco seasoning until fragrant (about 2 minutes).
  3. Spread a thin layer of salsa on the bottom of a baking dish. Layer with noodles, half of the beef mixture, black beans, and half the cheese.
  4. Repeat layering with remaining noodles, salsa, beef mixture, black beans, and top with remaining cheese.
  5. Cover with foil and bake for 25 minutes; remove foil and bake for an additional 15 minutes until cheese is bubbly and golden.
  6. Let cool slightly before slicing; garnish with sour cream and cilantro before serving.
