  • 1 sheet puff pastry (thawed)
  • 3 large eggs
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup diced bell peppers (mixed colors)
  • 1/4 cup finely chopped onion
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). In a skillet over medium heat, sauté onion and bell peppers until tender. Add beaten eggs and cook until just set.
  2. Roll out the puff pastry on a floured surface to about 1/8 inch thick. Cut into rectangles.
  3. Spoon the egg mixture onto half of the rectangles, leaving edges clear. Top with cheese.
