Instructions
- Preheat oven to 350°F (175°C). Crush chocolate graham crackers into fine crumbs and mix with melted butter.
- Press crumb mixture into a 9-inch pie pan and bake for 10 minutes. Let cool completely.
- In a mixing bowl, whip heavy cream, powdered sugar, mint extract, and optional green food coloring until soft peaks form.
- Fold in mini chocolate chips, then pour the filling into the cooled crust.
- Cover and refrigerate for at least four hours or overnight before serving.
