- 1 cup bell peppers, chopped (mixed colors)
- 2 green onions, chopped (for garnish)
Instructions
- Peel and dice the potatoes into bite-sized cubes. Rinse under cold water to remove excess starch.
- Heat vegetable oil in a large skillet over medium heat. SautΓ© the onions until translucent, then add garlic and cook until fragrant.
- Increase heat slightly and add the minced meat. Cook until browned.
- Stir in diced potatoes and soy sauce, mixing well to coat evenly.
- After about 10 minutes of cooking, add chopped bell peppers and continue cooking for another 5 minutes until everything is tender but not mushy.
- Garnish with chopped green onions before serving hot.
