  • 1 lb lean ground beef or pork
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp vegetable oil (canola or avocado)
  • 1 cup bell peppers, chopped (mixed colors)
  • 2 green onions, chopped (for garnish)

Instructions

  1. Peel and dice the potatoes into bite-sized cubes. Rinse under cold water to remove excess starch.
  2. Heat vegetable oil in a large skillet over medium heat. SautΓ© the onions until translucent, then add garlic and cook until fragrant.
  3. Increase heat slightly and add the minced meat. Cook until browned.
  4. Stir in diced potatoes and soy sauce, mixing well to coat evenly.
  5. After about 10 minutes of cooking, add chopped bell peppers and continue cooking for another 5 minutes until everything is tender but not mushy.
  6. Garnish with chopped green onions before serving hot.
