Ingredients

Scale
  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 12 oz penne or rotini pasta
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1.5 cups freshly grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Season the chicken with salt and pepper; sear until golden brown on both sides (about 6 minutes each side). Remove the chicken and set aside.
  2. In the same pot, sauté minced garlic for about 1 minute until fragrant.
  3. Add uncooked pasta, chicken broth, and heavy cream; stir to combine. Bring to a gentle boil, then reduce heat to simmer. Cover and cook for about 10 minutes or until pasta is tender.
  4. Shred the cooked chicken into bite-sized pieces and stir it back into the pot with the Parmesan cheese until melted and creamy. Adjust seasoning if needed.
  5. Serve hot, garnished with extra Parmesan cheese and fresh basil if desired.
