  • 1 cup canned chickpeas (rinsed)
  • 1 cup green or brown lentils (rinsed)
  • 2 cups fresh tomatoes (chopped) or 1 can (14 oz) diced tomatoes
  • 1 medium onion (chopped)
  • ¼ cup fresh cilantro (chopped)
  • ¼ cup fresh parsley (chopped)
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 tsp ground turmeric
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 4 cups vegetable broth or water
  • Salt and pepper to taste

Instructions

  1. Rinse chickpeas and lentils under cold water. Chop onions, tomatoes, and herbs finely.
  2. In a large pot over medium heat, add olive oil and sauté onions until translucent (about 5 minutes).
  3. Stir in chopped tomatoes, cinnamon, ginger, turmeric, salt, and pepper. Cook for about 10 minutes until the mixture thickens slightly.
  4. Add lentils and chickpeas to the pot along with vegetable broth or water. Bring to a boil then reduce heat.
  5. Cover partially with a lid and simmer for about 30–40 minutes until lentils are tender. Stir occasionally.
  6. Once cooked, stir in chopped cilantro, parsley, and lemon juice. Adjust seasoning as needed.
