  • 8 corn tortillas
  • 2 cups shredded cheese (cheddar & Monterey Jack)
  • 1 cup salsa (store-bought or homemade)
  • 1 medium onion (chopped)
  • 1 tsp chili powder
  • 1 tsp cumin
  • Fresh cilantro (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a pan over medium heat, sauté chopped onions in oil until translucent (about 5 minutes).
  3. Add ground beef to the pan and cook until browned; stir in chili powder and cumin.
  4. Fill each tortilla with a generous spoonful of the meat mixture and sprinkle with cheese; roll up tightly.
  5. Spread salsa on the bottom of a baking dish and place rolled enchiladas seam-side down.
  6. Top with remaining salsa and cheese; bake for 20-25 minutes until bubbly and golden brown.
