  • 9 no-boil lasagna noodles
  • 15 oz whole milk ricotta cheese
  • 3 cups shredded fresh mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 cup sour cream
  • 4 tbsp butter
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 1/4 tsp nutmeg
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a saucepan over medium heat, melt butter. Stir in flour to create a roux until golden brown. Gradually whisk in milk until thickened.
  3. Add salt, pepper, and nutmeg into the sauce, stirring continuously.
  4. In a baking dish, spread a thin layer of white sauce on the bottom. Layer with noodles, followed by ricotta mixed with spinach, then mozzarella. Repeat layers until ingredients are used up.
  5. Top with remaining mozzarella and Parmesan.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15-20 minutes until bubbling and golden.
