Instructions
- Preheat oven to 400°F (200°C) and wash baby potatoes. Halve them for even cooking.
- Mince fresh garlic and set aside.
- Season ribeye steak with salt and pepper. Heat a skillet over medium-high heat and sear the steak for about 4 minutes on each side for medium-rare.
- In the same skillet, melt unsalted butter over low heat, add minced garlic, and sauté until fragrant (about 1 minute).
- Toss halved baby potatoes in olive oil, salt, and pepper, then spread on a baking sheet and roast for 20-25 minutes until golden brown.
- Pour garlic butter over steak and potatoes just before serving, garnish with chopped parsley.
