Ingredients

Scale
  • 34 boneless, skinless chicken breasts (approximately 1.5 lbs)
  • 2 tablespoons Cajun seasoning
  • 1 cup orzo pasta
  • 1 cup bell peppers (diced; mixed colors)
  • 1 medium onion (diced)
  • 4 cloves garlic (minced)
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream

Instructions

  1. Dice chicken into bite-sized pieces and chop bell peppers and onion.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and season with Cajun seasoning; cook until golden brown, about 7-10 minutes. Remove from skillet and set aside.
  3. In the same skillet, add onions and bell peppers; sauté until soft, about 5 minutes. Add minced garlic and cook for another minute.
  4. Pour in chicken broth and bring to a simmer. Add orzo and cook according to package instructions, about 8 minutes.
  5. Once orzo is al dente, return chicken to the skillet along with heavy cream. Mix well and simmer until warmed through.
