  • 1 cup sour cream (or Greek yogurt)
  • 2 cups shredded cheddar and Monterey Jack cheese blend
  • 2 cups tortilla chips

Instructions

  1. Preheat oven to 350°F (175°C). In a large skillet, brown the ground beef over medium heat until no longer pink; drain excess fat.
  2. Stir in taco seasoning and diced tomatoes. Simmer for 5 minutes until slightly thickened.
  3. Mix in the rinsed black beans until heated through.
  4. In a greased baking dish, layer half of the beef mixture, followed by tortilla chips and half of the cheese. Spread sour cream over the chips.
