Description

  • 8 oz (225g) fresh cremini or button mushrooms, sliced
  • 3 tbsp extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 tsp kosher salt
  • Β½ tsp black pepper
  • 2 tbsp parsley or thyme, chopped (optional)

Instructions

  1. Preheat oven to 425Β°F (220Β°C).
  2. In a large bowl, combine cauliflower florets and sliced mushrooms with olive oil, minced garlic, salt, and pepper. Toss until coated.
  3. Spread vegetables in a single layer on a parchment-lined baking sheet.
  4. Roast for 25-30 minutes, stirring halfway through until golden brown.
  5. If desired, sprinkle fresh herbs over the top before serving.
