Ingredients
- 3 boneless, skinless chicken breasts (1.5 lbs)
- 4 cups baby spinach
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- 1/2 cup crumbled feta cheese
- 1/3 cup pitted Kalamata olives, halved
- 1/4 medium red onion, thinly sliced
- Juice of 1 lemon (about 2 tbsp)
- 3 tbsp extra virgin olive oil
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Season chicken breasts with salt and pepper and place on a lined baking tray.
- Bake for 20-25 minutes until cooked through. Let rest before slicing.
- While the chicken cools, wash and prepare the spinach, cucumber, tomatoes, red onion, and olives.
- In each Mason jar, layer the ingredients starting with lemon juice and olive oil at the bottom. Add cucumbers, red onions, tomatoes, feta cheese, olives, sliced chicken, and finish with spinach.
