  • 3 boneless, skinless chicken breasts (1.5 lbs)
  • 4 cups baby spinach
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/2 cup crumbled feta cheese
  • 1/3 cup pitted Kalamata olives, halved
  • 1/4 medium red onion, thinly sliced
  • Juice of 1 lemon (about 2 tbsp)
  • 3 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Season chicken breasts with salt and pepper and place on a lined baking tray.
  2. Bake for 20-25 minutes until cooked through. Let rest before slicing.
  3. While the chicken cools, wash and prepare the spinach, cucumber, tomatoes, red onion, and olives.
  4. In each Mason jar, layer the ingredients starting with lemon juice and olive oil at the bottom. Add cucumbers, red onions, tomatoes, feta cheese, olives, sliced chicken, and finish with spinach.
  5. Seal jars tightly and enjoy immediately or store for later!
