  • 2 bell peppers, chopped
  • 1 medium zucchini, sliced
  • 1 red onion, chopped
  • 2 tbsp extra virgin olive oil
  • 3 tbsp tahini
  • Juice of 1 lemon (about 3 tbsp)
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Chop bell peppers, zucchini, and red onion into bite-sized pieces.
  3. In a large bowl, toss chickpeas and veggies with olive oil, garlic powder, cumin, salt, and pepper until well coated.
  4. Spread the mixture evenly on a baking sheet in a single layer. Roast for about 25-30 minutes until veggies are tender and slightly charred.
  5. While roasting, whisk together tahini, lemon juice, water (to thin), salt, and pepper in a separate bowl until smooth.
  6. Once roasted, assemble the bowl by adding veggies and chickpeas topped with tahini dressing.
