Instructions
- Preheat the oven to 350°F. In a bowl, mix graham cracker crumbs with melted butter until combined. Press this mixture into the bottom of a greased pan to form the crust.
- In another bowl, beat softened cream cheese and powdered sugar until smooth. Gradually add coconut milk, mixing well.
- Gently fold in whipped topping until fully incorporated. Spread half of this filling over the crust and sprinkle half of the toasted shredded coconut on top.
- Refrigerate for at least four hours or overnight to set.
- Once chilled, spread the remaining filling over the first layer and top with the remaining shredded coconut.
