Instructions

  3. Add the whole milk, sugar, salt, cinnamon stick, and vanilla extract to the saucepan. Stir gently as it heats.
  4. Simmer on low heat for approximately 30 minutes, stirring occasionally until the mixture thickens.
  5. In a small bowl, whisk together the egg yolks with a bit of hot rice mixture to temper them; then stir back into the pot and cook for an additional 5 minutes.
  6. Remove from heat, discard the cinnamon stick, and serve warm in bowls topped with extra cinnamon or raisins if desired.
