- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese

- 2 tbsp fresh parsley, finely chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C). Slice the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with olive oil and sprinkle with salt.
- Place cut-side down on a baking sheet and roast for 40–45 minutes until fork-tender.
- While roasting, heat heavy cream in a saucepan over medium heat until simmering. Stir frequently.
- Add minced garlic and Parmesan cheese to the cream, stirring until melted and creamy (about 3–5 minutes).
- Once the squash is done, scrape out the strands and add them to the sauce. Toss until evenly coated.
- Serve warm, garnished with fresh parsley.
