- 8 oz fettuccine or spaghetti
- 1 lb large shrimp, peeled and deveined
- 1 cup fresh asparagus, chopped (about 1 bunch)
- 1 cup heavy cream
- 3 cloves garlic, minced
- 1/2 cup freshly grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Juice of 1 lemon
Instructions
- Boil salted water in a pot over medium-high heat. Add pasta and cook until al dente according to package instructions. Drain and set aside.
- In the same pot, heat olive oil over medium heat. Sauté minced garlic for about one minute until fragrant.
- Add shrimp to the pot and cook until pink and opaque (about 3 minutes per side). Remove shrimp from the pot but leave the garlic.
- Toss in chopped asparagus and sauté for about five minutes until bright green yet tender-crisp.
- Pour in heavy cream, stirring in grated Parmesan cheese until melted. Return shrimp to the pot.
- Squeeze lemon juice over everything, then add cooked pasta; toss well to coat all ingredients.
