  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • ½ cup sour cream
  • 2 large eggs
  • 2 tsp vanilla extract
  • ¼ cup brown sugar (for topping)

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Combine graham cracker crumbs and melted butter; press into an 8×8-inch baking pan to form the crust.
  3. Beat cream cheese and granulated sugar until smooth. Add eggs one at a time, then mix in sour cream and vanilla.
  4. Pour the filling over the crust and bake for 35-40 minutes until edges are set.
  5. Cool at room temperature, then refrigerate for at least four hours or overnight.
  6. Before serving, sprinkle brown sugar on top and use a kitchen torch to caramelize.
