  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs, room temperature
  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp espresso powder
  • 1/4 tsp salt
  • 1 cup mascarpone cheese
  • 1 tsp vanilla extract
  • 2 tbsp coffee liqueur (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan or line it with parchment paper.
  2. In a medium saucepan over low heat, melt the unsalted butter, granulated sugar, and brown sugar until smooth (about 5 minutes). Remove from heat and let cool slightly.
  3. Whisk in the eggs one at a time until fully incorporated.
  4. Sift together the flour, cocoa powder, espresso powder, and salt into the mixture. Gently fold until just combined.
  5. In a separate bowl, mix mascarpone cheese with vanilla extract and coffee liqueur until smooth.
  6. Spread half of the brownie batter in the prepared pan. Add dollops of the mascarpone mixture on top, followed by the remaining brownie batter. Swirl gently for a marbled effect.
  7. Bake for 25-30 minutes until set but still slightly gooey in the center. Let cool completely before slicing.
