- 1 cup mascarpone cheese
- 1 tsp vanilla extract
- 2 tbsp coffee liqueur (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan or line it with parchment paper.
- In a medium saucepan over low heat, melt the unsalted butter, granulated sugar, and brown sugar until smooth (about 5 minutes). Remove from heat and let cool slightly.
- Whisk in the eggs one at a time until fully incorporated.
- Sift together the flour, cocoa powder, espresso powder, and salt into the mixture. Gently fold until just combined.
- In a separate bowl, mix mascarpone cheese with vanilla extract and coffee liqueur until smooth.
- Spread half of the brownie batter in the prepared pan. Add dollops of the mascarpone mixture on top, followed by the remaining brownie batter. Swirl gently for a marbled effect.
- Bake for 25-30 minutes until set but still slightly gooey in the center. Let cool completely before slicing.
