Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 Β½ cups whole milk
  • 1 cup fresh raspberries (halved)
  • 8 oz cream cheese (softened)
  • Β½ cup powdered sugar
  • 1 cup semi-sweet chocolate chips (melted)
  • 1 tsp vanilla extract

Instructions

  1. In a mixing bowl, whisk together flour and eggs until smooth. Gradually add milk, mixing until you achieve a thin batter. Let it rest for 30 minutes.
  2. Heat a non-stick skillet over medium heat, lightly greasing it. Pour half a ladleful of batter into the skillet, swirling to form an even layer. Cook for about 2 minutes or until edges lift slightly.
  3. Combine softened cream cheese, powdered sugar, vanilla extract, and melted chocolate chips in another bowl until creamy. Gently fold in halved raspberries.
  4. Spread the filling evenly on each cooked crepe and roll them up tightly. Place seam-side down on a platter.
  5. Optionally dust with powdered sugar or drizzle with melted chocolate before serving.
