- 1 cup fresh apple cider
- 1 medium onion, finely chopped
- 1/2 cup plain breadcrumbs
- 1 large egg
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp fresh thyme (or 1/2 tsp dried thyme)
- 2 tbsp extra virgin olive oil
- 1 cup low-sodium chicken broth
- 2 tbsp balsamic vinegar
- 1 tbsp honey or brown sugar
Instructions
- In a large bowl, combine ground beef, breadcrumbs, chopped onion, egg, salt, pepper, and thyme. Mix gently until just combined.
- Roll the mixture into golf ball-sized meatballs and place them on a parchment-lined baking sheet.
- In a skillet over medium heat, add olive oil and sear meatballs in batches until golden brown on all sides. Remove from skillet.
- In the same skillet, combine apple cider, chicken broth, balsamic vinegar, and honey/brown sugar. Scrape up browned bits from the bottom for extra flavor.
- Return meatballs to the skillet with the sauce. Cover and simmer on low heat for about 30 minutes until cooked through.
