  • 1 cup fresh apple cider
  • 1 medium onion, finely chopped
  • 1/2 cup plain breadcrumbs
  • 1 large egg
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp fresh thyme (or 1/2 tsp dried thyme)
  • 2 tbsp extra virgin olive oil
  • 1 cup low-sodium chicken broth
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey or brown sugar

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, chopped onion, egg, salt, pepper, and thyme. Mix gently until just combined.
  2. Roll the mixture into golf ball-sized meatballs and place them on a parchment-lined baking sheet.
  3. In a skillet over medium heat, add olive oil and sear meatballs in batches until golden brown on all sides. Remove from skillet.
  4. In the same skillet, combine apple cider, chicken broth, balsamic vinegar, and honey/brown sugar. Scrape up browned bits from the bottom for extra flavor.
  5. Return meatballs to the skillet with the sauce. Cover and simmer on low heat for about 30 minutes until cooked through.
