- 3 garlic cloves, minced
- 1 cup panko breadcrumbs
- 2 tbsp honey
- 2 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 2 green onions, chopped (for garnish)
- ½ cup ketchup
- 2 tbsp corn starch mixed with 2 tbsp water
- Sesame seeds (optional)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine ground beef, ginger, garlic, panko breadcrumbs, honey, soy sauce, sesame oil, and rice vinegar. Mix gently until just combined.
- Roll mixture into one-inch meatballs and place on the prepared baking sheet.
- Bake for 15–20 minutes until golden brown and cooked through.
- Meanwhile, prepare the sauce: whisk together ketchup and corn starch mixture in a saucepan over medium heat until bubbling and thickened (about 5 minutes).
- Toss baked meatballs in the sauce until evenly coated. Return to oven for an additional 5 minutes if desired. Garnish with green onions and sesame seeds before serving.
