- 1/2 cup Kewpie mayonnaise
- 1 tbsp honey
- 1 tbsp sesame oil
- 3 green onions, sliced
- 2 tbsp low-sodium soy sauce
- Juice of 1 lime
Instructions
- Preheat skillet over medium heat; add oil. Season chicken with salt and pepper, then sear until golden brown (5-7 minutes per side).
- In a bowl, whisk together mayonnaise, sriracha, honey, soy sauce, lime juice, and sesame oil for the sauce.
- Chop bell peppers and carrots; sauté in a separate skillet until tender (about 5 minutes).
- Once chicken reaches an internal temperature of 165°F, slice thinly and toss with half the sauce.
- Assemble bowls with rice as base; top with sautéed veggies and sliced chicken. Drizzle remaining sauce on top and garnish with green onions.
