- 3 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 tbsp extra virgin olive oil
- ½ cup BBQ sauce
- 4 cups mixed greens (romaine, spinach, arugula)
- 1 cup cherry tomatoes (halved)
- 1 medium cucumber (sliced)
- 2 ripe avocados
- 2 tbsp freshly squeezed lime juice
- Salt and pepper to taste
Instructions
- Marinate chicken breasts in olive oil and BBQ sauce for at least 30 minutes.
- Preheat grill to medium-high heat. Grill chicken for 6-7 minutes per side or until internal temperature reaches 165°F.
- While grilling, wash and dry mixed greens, then place them in a large bowl. Add halved cherry tomatoes and sliced cucumber.
- In a blender, combine avocados, lime juice, salt, and pepper. Blend until smooth; add water for desired consistency.
- Once the chicken rests for a few minutes, slice it into strips or cubes and toss with the salad mix. Drizzle with avocado dressing before serving.
