Ingredients

  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tbsp extra virgin olive oil
  • ½ cup BBQ sauce
  • 4 cups mixed greens (romaine, spinach, arugula)
  • 1 cup cherry tomatoes (halved)
  • 1 medium cucumber (sliced)
  • 2 ripe avocados
  • 2 tbsp freshly squeezed lime juice
  • Salt and pepper to taste

Instructions

  1. Marinate chicken breasts in olive oil and BBQ sauce for at least 30 minutes.
  2. Preheat grill to medium-high heat. Grill chicken for 6-7 minutes per side or until internal temperature reaches 165°F.
  3. While grilling, wash and dry mixed greens, then place them in a large bowl. Add halved cherry tomatoes and sliced cucumber.
  4. In a blender, combine avocados, lime juice, salt, and pepper. Blend until smooth; add water for desired consistency.
  5. Once the chicken rests for a few minutes, slice it into strips or cubes and toss with the salad mix. Drizzle with avocado dressing before serving.
