  • 8 flour tortillas
  • 2 cups cheddar cheese, grated
  • 1 cup salsa (mild or spicy)
  • 2 tsp chili powder
  • 1 tsp cumin
  • 2 tsp olive oil
  • Sour cream (optional for serving)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a skillet, heat olive oil over medium heat. Sauté the chopped onion until translucent (about 3 minutes).
  3. Add the ground beef, chili powder, and cumin; cook until browned (6-8 minutes).
  4. Stir in black beans and corn; cook for an additional 3 minutes.
  5. Layer two tortillas in the baking dish, followed by half of the beef mixture, cheese, and salsa. Repeat with remaining tortillas and mixture.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for another 10 minutes until bubbly and golden.
  7. Let cool slightly before serving; garnish with sour cream if desired.
