  • 8 corn tortillas
  • 2 cups shredded cheddar cheese
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 2 tsp chili powder
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, add olive oil and sauté onions and garlic until translucent.
  3. Add ground beef and cook until browned (6–8 minutes). Drain excess fat.
  4. Season with chili powder, salt, and pepper; simmer for 2 minutes.
  5. Spoon filling into each tortilla and roll tightly. Place seam-side down in a greased baking dish.
  6. Pour half the enchilada sauce over the tortillas and sprinkle with cheese.
  7. Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes until bubbly.
