  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 cup full-fat sour cream
  • 1 tsp Dijon mustard
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Sear the sliced beef for about 2 minutes until browned on all sides. Remove and set aside.
  2. In the same skillet, sauté diced onions until translucent (about 3 minutes). Add minced garlic and cook for another minute.
  3. Stir in sliced mushrooms and sauté until soft (around 4 minutes).
  4. Pour in beef broth, scraping up any browned bits from the pan. Add Dijon mustard and simmer for 5 minutes.
  5. Lower heat and fold in sour cream until well combined. Simmer for an additional 3 minutes.
  6. Serve over egg noodles or rice, garnished with fresh parsley.
