  • Zest of 1 lemon
  • 2 tbsp lemon juice
  • 3/4 cup heavy cream

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, sugar, and salt until well combined.
  3. Add the cold butter pieces and blend with a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. In another bowl, mix heavy cream, lemon juice, and lemon zest. Add this to the dry mixture along with the blueberries, stirring gently until just combined.
  5. Turn the dough onto a floured surface and pat into a circle about 1 inch thick. Cut into wedges or desired shapes.
