  • 2 tsp Cajun seasoning
  • 1 can (15 oz) red beans (rinsed)
  • 1 cup long-grain rice (basmati or jasmine)
  • 1 green bell pepper (diced)
  • 1 medium yellow onion (diced)
  • 2 garlic cloves (minced)
  • 1 cup low-sodium chicken broth
  • 1 tbsp lemon juice
  • 3 tbsp vegetable oil

Instructions

  4. Add rinsed red beans and minced garlic to the skillet; pour in chicken broth and simmer for 5-7 minutes.
  5. Season fish fillets with Cajun seasoning. In another skillet, heat oil over medium-high heat until shimmering. Fry fish for about 4-5 minutes per side until golden brown; drizzle with lemon juice before serving.
