  • 8 oz cremini mushrooms, sliced
  • 1 cup grated Gruyere cheese
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 2 tbsp unsalted butter
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Cook pasta in salted boiling water according to package instructions until al dente. Reserve ½ cup pasta water before draining.
  2. In a skillet over medium heat, melt butter. Sauté leeks until golden brown and fragrant.
  3. Add mushrooms and garlic; cook until mushrooms are tender and juices are released (about 5 minutes).
  4. Pour in heavy cream and let simmer for about 3 minutes until slightly thickened.
  5. Stir in grated Gruyere until melted, adding reserved pasta water as needed for desired consistency.
  6. Toss cooked pasta with the sauce until well-coated. Garnish with fresh parsley before serving.
