- 12 oz ziti pasta
- 2 cups ricotta cheese
- 4 cups fresh spinach
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 2 large eggs
- 1 tsp garlic powder
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Boil salted water and cook ziti until al dente, about 8-10 minutes. Drain and rinse.
- In a bowl, mix marinara sauce with garlic powder, salt, and pepper.
- In another bowl, combine ricotta cheese, eggs, half the mozzarella, salt, and pepper until creamy. Gently fold in spinach.
- Spread half of the marinara in a baking dish. Layer with half the ziti and half the ricotta-spinach mixture. Repeat layers.
- Top with remaining mozzarella and parmesan cheese. Cover with foil and bake for 25 minutes; uncover and bake an additional 15 minutes until golden.
