  • 12 oz ziti pasta
  • 2 cups ricotta cheese
  • 4 cups fresh spinach
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 2 large eggs
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Boil salted water and cook ziti until al dente, about 8-10 minutes. Drain and rinse.
  2. In a bowl, mix marinara sauce with garlic powder, salt, and pepper.
  3. In another bowl, combine ricotta cheese, eggs, half the mozzarella, salt, and pepper until creamy. Gently fold in spinach.
  4. Spread half of the marinara in a baking dish. Layer with half the ziti and half the ricotta-spinach mixture. Repeat layers.
  5. Top with remaining mozzarella and parmesan cheese. Cover with foil and bake for 25 minutes; uncover and bake an additional 15 minutes until golden.
