  • 34 boneless, skinless chicken breasts (1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 8 oz fettuccine pasta
  • 1 cup heavy cream
  • 2 large Yukon Gold potatoes, diced
  • 2 tbsp fresh sage leaves, finely chopped
  • 1 cup mushrooms, sliced
  • 1/2 cup fresh basil leaves
  • 1/2 cup grated Parmesan cheese
  • Olive oil, salt, and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C). Toss diced potatoes with olive oil, salt, pepper, and sage; roast for about 30 minutes until golden.
  2. Season chicken breasts with salt and pepper. In a skillet over medium-high heat with olive oil, cook chicken for about 6 minutes on each side until browned and cooked through. Remove from heat and let rest.
  3. In the same skillet, sauté minced garlic until fragrant. Add heavy cream and bring to a gentle simmer.
  4. Cook pasta according to package instructions; drain and save some pasta water. Combine pasta with the Alfredo sauce and grated Parmesan.
  5. In another pan, sauté sliced mushrooms until caramelized; add basil leaves until wilted.
  6. Slice rested chicken and serve it over creamy pasta with crispy sage potatoes on the side. Drizzle mushroom basil pesto cream generously over the top.
