Ingredients
- 3–4 boneless, skinless chicken breasts (1.5 lbs)

- 8 oz fettuccine pasta
- 1 cup heavy cream
- 2 large Yukon Gold potatoes, diced
- 2 tbsp fresh sage leaves, finely chopped
- 1 cup mushrooms, sliced
- 1/2 cup fresh basil leaves
- 1/2 cup grated Parmesan cheese
- Olive oil, salt, and pepper to taste
Instructions
- Preheat oven to 425°F (220°C). Toss diced potatoes with olive oil, salt, pepper, and sage; roast for about 30 minutes until golden.
- Season chicken breasts with salt and pepper. In a skillet over medium-high heat with olive oil, cook chicken for about 6 minutes on each side until browned and cooked through. Remove from heat and let rest.
